Not So Sour Sourdough Chocolate Chip Cookies

If you happen to have some sourdough starter kicking around, this is the perfect recipe for it.

Ingredients

1/2 cup of vegan butter

1/2 cup of coconut oil

1 flax egg (1 tablespoon of flax seed mixed with 3 tablespoons of water)

1 cup of sourdough starter

1 teaspoon of vanilla

3 cups of plain flour

1 cup of caster sugar

1/4 teaspoon of bicarb of soda

1/4 teaspoon of baking powder

pinch of salt

50g of chopped dark chocolate

Method

1. In a large mixing bowl mix butter, coconut oil and flax egg. Mix until smooth and combined

2. Add to your butter, oil and egg the sourdough starter and vanilla

3. Next fold in your dry ingredients. You will probably need to get your hands in there to combined all the ingredients together. Be careful not to overwork the dough as it will cause the dough to become tough

4. Once the dough is combine, set aside to rest for 15 minutes. Whilst the dough is rest, pre heat your oven to 150c fan

5. After 15 minutes, shape your dough into small balls and place onto a lined baking sheet. Flatten the dough out with the palm of your hands to about 5cm thick. They don't spread in the oven when cooking. The dough should make approximately 18 cookies, although it depends on what size you make them

6. Cook in the oven for 10 to 15 minutes or until golden
